It has really been a long time. I always feel so overwhelmed during the school season, that I never feel like doing much else (from the stress). I have so much to share. New journey’s I’ve taken since last time. New experiences. Even new struggles that have come between my path.

On my las blog, I mentioned that I had a surprise going on in my life aside from trying to understand how to be a wedding planner and how to go about it.

Something New (Making It Happen)

Hi guys,

There are a couple of new things coming up in my life. One, I will announce in a couple of weeks! The other is something I’ve been looking at getting involved in but have been on the fence to do. I want to start a Wedding Planning business. The only thing is I wouldn’t know how to go about it. Ideas for when it comes to the wedding I am confident in. It’s the process to actually get started. My father in law was telling about the different managements into building this work. Such as: managing the people, managing the time/schedules, managing the vendors, and the budget. I’ve already had these thoughts in the back of mind and I’m pretty good at handling the ‘upfront’ and ‘hands on’ aspect of running this business. It’s the “business” part that I have no clue on approaching. I know building a website/logo is also a key, but what next…where do I go from there…

If there is anyone out there (especially other wedding planners) that can give me tips on how to start wedding planning or direct me somewhere. I would very much appreciate it. Little tips and advice will go a long way. If you happen to live in the Hampton Roads VA area and is a personal wedding planner. I would love to be an assistant and shadow your work ethic. Lent

Yesterday was the start of Lent! {For those who don’t know what Lent is about. It’s the act of valuing repentance. As Catholics, for 40 days and 40 nights (from Ash Wednesday to Easter Sunday) we practice prayer, repent, and fasting. Some may also give up something they value or do that are unGodly means to concentrate on being closer to God and his practices.

My family and I went to Mass to get our ashes put on our foreheads. {Ashes symbolize the dust in which God made us, and that we may remember that we will return to dust again one day.} Then I thought about what I should give up this year and maybe give some ideas to any of you that practice as well.

In previews years I’ve given up soda, chocolate, coffee, video games, and skipping a meal (as far as I can remember). You may ask that those do not add up for how old I am. I’ve repeated some of the previous years when I couldn’t think of anything. This year I decided to give up alcohol. Not that I drink every day at all. This year I feel like I’ve had more alcohol than I’ve had in one year (again not that I drink a lot anyway). I think the reason was because I haven’t had alcohol in a year since I was pregnant than had to breast feed for a while. Subconsciously, I think my mind wanted to make up for it. Plus with friends coming and going and us actually getting to celebrate as a family with our friends having new adventures this year, it added the reason to drink. I just wanted to stop for a while. Plus it helps to lose weight, just another benefit. My husband is giving up video games. Which is good, because he can finally concentrate on better things. Get more stuff done for himself, such a catching up on reading maybe get back into working out.

I laid out some ideas that I hope help some of you. Others people give up: reading certain types of books, tv, social media, electronics, phones, skip 1 or 2 meals, sweets, sex, porn, movies, shopping, going out to do something you routinely do, staying up late, sleeping in, giving up your favorite food/drink…etc. It can really be anything. Anything that distracts you from being closer to God. Good luck! I’ll keep you all in my prayers as well as I hope you keep my family in yours. Have a safe lent! Hot Chocolate

This recipe is easy, simple, and fast! It doesn’t take a lot of ingredients and taste way better than the powdered hot chocolate (though I still use it when I’m lazy). Perfect for snowy days or cold rainy days! 🙂

Ingredients:

  1. Chocolate Chips or Bark (milk or dark)
  2. Milk (1% or 2% or whole) 
  3. Heavy Whipping Cream
  4. Powdered Sugar 

Makes about 2 cups

Tools:

  1. Pot
  2. Measuring cup
  3. Mixer/Whisk (manual and/or electric) 
  4. Bowl

  1. Measure 1 1/2 cup of milk (using whole milk will make it much more creamy and thicker). Pour into cooking pot. Put to medium heat.
  2. Measure 3/4 cup of heavy whipping cream. Pour into cooking pot.
  3. Stir with whisk (or any utensil) consistently to prevent from burning.
  4. While waiting for that to heat up a bit. You can make whip cream with the left over heaving whipping cream. {There are no measurements to scale on making whip cream. I add as I go.} Put heavy whipping cream in a bowl. Take some powdered sugar add to bowl (less powered sugar then whipping cream or it will be too think and less of a whip). You can mix with the an electric mixer or whisk (it will take much longer for the it be fluffy manually). Mix until fluffy like whip cream!
  5. Make sure you’re watching the milk to make sure it does not burn or boil over (if so lower heat). Put chocolate chips into a safe microwaveable bowl and heat until melted (heat in short increments until desired effect). {You don’t have to melt the chocolate if you don’t want to. You can put it straight into the hot pot of milk and cream, but bigger chunks take a bit more to melt and mix. Also, how much chocolate chip determines how rich you want the hot chocolate!} IMG_6796.jpg
  6. Add chocolate into hot pot. Mix until all the chocolate has melted and milk is warm and creamy. {If you wish to have more than 2 cups. It is very easy just to add more milk and heavy whipping cream as you go along. Remember to add more milk than heavy cream.}      IMG_6799
  7. Put in mug and add whip cream in top of the hot chocolate!

Pork Chop Crunch

This recipe I made up, by ‘made up’ I mean I didn’t look up a recipe. I’m sure someone has already made it somewhere out there, its fast and easy. One of the many quick dinner’s I make. I will also show some basic sides to make to go with the meat.

Ingredients:

  1. Thin Cut Pork Chops (honestly can use any cut of pork chops)
  2. Veggies: Green Beans & Broccoli
  3. Starch: Tater tots (frozen)
  4. Panko
  5. Vegetable Oil
  6. Coconut Oil/Olive Oil
  7. Salt & Pepper
  8. Thyme
  9. Rosemary
  10. Parsley
  11. 2 large eggs (for 5 thin cut pork chops, add more if required) 

Prep/Cooking Time: Approximately 30-45mins

  1. Take 2 pans, put vegetable oil in one and coconut oil in the other, (I don’t really use measure to scale when I cook. I use what I believe is enough and add as I go) I would say to cover the whole pan. {You can also substitute the coconut oil with olive oil or even vegetable oil, we are using it for the veggies, so it’s a matter of health and taste.} Heat the oils on the pan as you prep the meal. {At this time, preheat the oven for the tots to whatever the instructions say on the bag}IMG_6643
  2. Rinse the veggies and cut them. Add the veggies with the coconut oil. Mix for consistency. Then set aside to settle.
  3. Rinse the pork chops (I always rinse my meats). Add salt, pepper, thyme, rosemary on the pork (front and back).
  4. Get a 2 separate containers. One for the 2 eggs (mix) lightly add salt & pepper. One to put Panko crumbs in (preferably these containers should fit the size of your pork chops).
  5. {Add the tots in the oven whenever preheat is finished.}

  6. Go back to your veggies and add: salt, pepper, parsley, & thyme. Mix for consistency. Let it settle and cook. {Make sure to always go back and mix to prevent from burning}
  7. Take the mixed eggs dip pork chops in front and back. Then to the next container with the Panko crumbs, dip front and back. Place directly into the hot vegetable oil pan. {Repeat for each pork chop}

    I find it easy to have it as a station to prevent spilling

    8. Cook until Panko’s are brown and meat is cook (145ºF). Veggies until mid texture (not too soft and still has a crunch). {Take tots out when finished}

    You have your dinner, “Pork Chop Crunch meal!”

Oreo Truffles (none bake)

My first blog recipe YAY! I’m doing dessert first since I have the biggest sweet tooth. This recipe I got through my friend that baked it back from our ‘Friendsgiving.’ I didn’t realize it was so easy until he gave me the link to the Pinterest he got it off of. These are perfect for a last minute dessert to bring to a party! This is how I made mine…

Ingredients:

  • 1 bar of Cream Cheese
  • 1 package of Oreos 
  • Almond bar (white, milk, or dark chocolate)

Makes about 25-35 pieces (depending how big you make the balls)

Tools:

  • 2 Bowls (1 bake safe)
  • Food Processor/Blender 
  • Baking Spatula 
  • Your Hands!/electric mixer (optional)
  • Baking pan
  • Wax/parchment paper
  • Pot (to use to steam)/microwave
  1. Get your Oreos and put them in the food processor or blender. Have them all crushed. {If you don’t have any of these, like we didn’t during the holidays. You can put them all in a big Ziplock bag and crush them by hand. It will take some time doing it this way. You need the Oreos as fine as you can.} After they are crushed put them in a bowl.
  2. Take the cream cheese and add it in the bowl of processed Oreos. Then mix the cream cheese and Oreos well. {You can use your hands like I did. But if you don’t want them to get messy or have the mixture under your nails. You can use an electric mixer or baking spatula.}
  3. Take your baking pan and put parchment paper on top (so the truffles don’t stick). Once you have mixed them well. Take a small piece of the truffle, and start rolling them into a ball (the size will determine how many you make in the end). During this time (if you’re a multitasker like me), take half of your Almond bar and start chopping them into smaller pieces. {Putting big bars to try and melt will take a much longer time, the smaller the better}. There are 2 ways to melt chocolate: putting it in the microwave and melting them or taking a pot add some water and using a bake safe bowl to put on top to melt the chocolate (steaming). Steaming, is a less chance of burning the chocolate and drying them out like a microwave would. {Make sure you are watching and constantly mixing your chocolate and putting in low temperature to avoid burning}
  4. Once you have made all your truffles. Dip them in the chocolate. {You can take it out of the pot (be careful, hot) or leave it in like I did}. I used a spoon to dunk the Oreos truffles in and take them out to prevent the chocolate to stick to fingers. After you dip them, put them back on the parchment paper.IMG_6609
  5. Put it in the freezer for 30mins-1hr (for best results). IMG_6610.jpg

Update: A New Page

My best friends recommended to me that I should make a page about all the food I make. Since I’m always posting some of the process on Snapchat and people say my food taste good, so here goes…

I will be making a page about some recipes I make up or have gotten and are things that I find useful. I like to cook but I also don’t like a long process, or a lot of dirty dishes for that matter. Being a mom means things that are fast and easy. A one income family also means saving money and being frugal with groceries, but still finding them to be healthy. I hope you all enjoy this new page and follow me on my journey. My first post will be tomorrow so stay tuned!

Starting The New Year Right

I hope all of you have decided on your new year goals. If not, it’s never too late to start any time. If you have not read my previous blog about some new year goals to add to your list, click here: Be The Best You This New Year

As for me, I just wanted to share an update of one of my goals (being healthier and fit). I’ve been keeping my schedule on for about 3 weeks now. I still have a bit more to go, but I’ve already seen some changes.

The key is finding a routine to fit your daily life. For example, I find it more effective if I workout as soon as I get up or a couple hours before I go to bed (If you have sleeping problems I wouldn’t recommend working out before bed. I have sleeping issues but either way I still don’t sleep right away at night). Then I eat a little something. Then go on with my day. If  I feel that my work out wasn’t intense enough that day I work out twice. I still use the same work out program: Melissa Bender First Bikini Competition Prep. Now I’m on the 3rd month of her program. I will be recycling this because it’s worked for me and it has a great amount of intensity (that I like at least). Sometimes I don’t follow it day by day. Most days I will and other days I will make up a few other workouts depending on what I feel like I really want to work on. If you’re wondering, I either use a mix of what I got from Melissa’s previous workout days or get routines off Pinterest/Instagram.

Another way to keep off that little weight is substituting some bad foods you eat. I’m not saying get ride of it completely. I know I could never get ride of sweets to save my life. I eat something healthy if I know I ate something bad that day, or schedule a cheat day. I also stopped eating in big portions. I eat a little at a time to see how much of it is my mind saying I need more food or my body saying thats enough. Always important to keep hydrated! I’ve always been a water drinker. It’s my go to drink. Once or twice a week I’ll treat myself to a Sprite or something with sugar. I’ve never really been a soda drinker, unless was the easier/faster option. I also drink teas and once in a while I’ll drink coffee, but takes me almost the whole day to drink a cup.

Some of you may ask if I use any supplements or tricks to make it go by a little faster. I do not use anything at the moment. I was hoping to get back on what I was using before I was pregnant as my pre-work out supplement, which was Oxyshred. I liked it! It worked for me, curved my appetite and gave me energy through out the day. I also bought a waist trainer right after I gave birth. I bought this at Amazon, which wasn’t too pricey but it wasn’t what you would see celebs use as their waist trainer. I would say it helps a little bit. I’m definitely more a boxy person, but it helped curve me up and prevented some major muffin tops to form (I never had one to begin with, but it helped). It does nothing to flatten your stomach, if that’s what you’re all wondering. At least the one I bought didn’t work that way. I stopped using it about 2/3 months ago. I’m strictly just working out and eating smarter. It is possible. This coming from a person that just likes to sit around read, play video games, play with my son, or watch tv and eat all day. My motivation is, one little step at a time. It doesn’t happen over night, though we may wish it. It may work faster for some others and some not. If this is a path you really want to change or do. Just don’t give up on it!

Be The Best You This New Year

I hope everyone had a great New Year’s holiday! Mine was pretty laid back. We had a couple of our friends over for dinner, and of course played video games all night (Star Wars: Battlefront). {If you have not gotten the hints, our family is into video games. More recently we’ve been back into gaming because really good games have come out these past few months. I would recommend checking out Fallout 4, Star Wars: Battlefront, Tom Clancy’s :Rainbow Six Siege, Until Dawn (only for Playstation 4), and Destiny: The Taken King.}

Before I talk about what my goals are this year I would like to share this quote.

A friend of mine posted this one her Instagram, which then I had to borrow for this blog today. This makes a great point! We need to learn from the previous year and grow to reach a better goal for the next. Instead of saying, ‘New Year’s Resolution’ I will be mentioning it as ‘goals.’ I will be striving for a better me this year. Do something different in my life to grow and help grow with those around me. I welcome all of you to join with me in achieving your goals this year. Become a better person for you and those around you.

With that, I want to share my goals for this year (with no particular importance to the order). Instead of one thing, because I wanted to really challenge myself. I’ve got about five things I want better myself with. I hope that it can give you guys some ideas on your goals this year as well.

  1. Read more books. This is probably the top five most pick every year, but it’s true. Having social media has really strayed us away from the basics of learning. I want to be a good example for my son. I want him to learn the way I had to growing up before technology took over. I already found a “Reading Challenge” list I found someone sharing off of Facebook. I am currently achieving ‘a book you previously abandoned,’ which is Grey by E. L. James (which I bought right after I got out of the hospital, from giving birth to our son, thinking I was going to have time to read it). I finished, ‘a book you can finish in a day,’ which I did two for reading Maximum Ride by James Patterson (a graphic novel version of the books). I also added a few book topics to the list of things to read, ‘a series of books, a book you read when you were younger, a graphic novel and/or Manga, and a book that was made into a movie or show.’ {I may have more to add as the year progresses}

  3. Another pretty cliché goal, is to be fit and healthier this year. That also means to eat healthier. Every year I always make this a goal of mine, because one of my many weakness is of my self-conscious body. Way back when I really started to be self-conscious, I was more worried about looking good. Now, as I get older I want to be healthy so I can be around for my son. I know a lot of illness run in my family and I want to make sure I can avoid them if not lessen most of them. Not going to lie, but some of the motivation is still for me to look better for myself. Giving birth to my son really slowed down losing weight for my body, so I have to work twice as much to have any effect. I was doing pretty well right after I got out of the hospital (I worked out with low intensity each day), and took a few weeks off so my body can recover from the birth. When the holiday started I was slowing down on my routine because we had a lot of visitors come and go. {Which is pretty much what happens to most people during the 3 month holiday season} Now, I’m trying to pick back up again, working out about 2 times a day to catch up; my routine is to work out about 6-5 times a week and usually rest on the weekends. As for my eating habits, I’m going back to eating smaller portions and stopping when my stomach says, ‘it has had enough.’ I’m going to make sure that this year around I will try to work a better system so I don’t slack off doing the holiday season.
  4. I want to write more. Fall 2015, I decided to put the time (and money) into this website. In hopes to maybe help bring in some money with more viewers. {Since I’m a stay at home mom going to school, and with a military  paycheck coming in is not much for our little family.} Mostly, I needed something to improve my writing skills. When I first started this website, I wrote a blog post about my english and grammar skills. I’m using this as a journal and a ticket to practice writing. Having a tangible journal only works for a couple of weeks for me. This way, having a website will give me a better push if I make deadlines for myself to write a couple times a week.
  5. Lastly, I really want to explore more this year. I want to get out of the house and get lost in the world. Not that my husband and I are hermits. We usually go out on the weekends because he works during the week. It’s harder with our son because he just has so much stuff we have to take. I also hate taking him in public for too long if he’s being a hot mess that day. Since he will be getting older this year and hopefully be walking around. I hope to go out on more family adventures. Having my son really motivates me to do more for him. I want to teach him things that I never knew. I want to show him different places in hopes one day he sees more than I ever have.

With that, I hope I’ve given you all some ideas for your goals this year. Some other topics that are popular are maybe cutting back on a certain food that’s not particular health for you. Some people make it a goal to maybe visit church more, or be more spiritual attached then they were before. Maybe it’s your plan to have a baby this year (if you do I pray that you and your partner best wishes). Maybe you’re addicted to something and would like to make an achievement to finally cut that habit out of your life (if so I pray that God can give you the strength to do so). What ever you choose to be your goal. {Pray on it. Let God guide the right path for you.} Let the goal fit to what is best for you. Make little goals. Having big ones are harder to accomplish in less time and they can be over whelming. Give yourself time and a chance to achieve them. Everyone is going to have something different or make that same goal different in their own way. Let’s make it another W O N D E R F U L year full of new memories! Be the best you!!!
