Steak Stir-fry

Easy “one-two-three” asian style recipe. {Marinating for a day is optional for more flavor.}

 

Ingredients:

  1. Beef Steak
  2. Green Beans and/or Broccoli
  3. Soy Sauce
  4. Rice Vinegar
  5. Garlic Salt
  6. Salt and Pepper
  7. White or Brown Rice

This process will show how I marinate it first, but it can be prepared for instant use.

1.(optional) Take your steak and tenderize it. Cut steaks into cubes, out in a storage container. IMG_6661

2. Add 1/2 cup (as needed) soy sauce, 1/4 cup rice vinegar, pepper, pinch of salt, and garlic salt in to the container of cubed steak. Mix well.

3. {After marinating it is ready to cook.} Cook rice (Rice cooker) while stir-fry is cooking as well (kill two birds with one stone). Add marinated meat into decent size pan. Stir well until meat on the outside is cooked.

4. After 5mins. Add green beans and/or broccoli. Stir both well. Add a touch more soy sauce, pepper and garlic salt in to pan. Cover pan and wait 5 mins (repeat for 20mins). IMG_6684

5. Cooked to medium-well or well done. Then Enjoy the meal. {Serves 1-3} IMG_6686

 

Hello…It’s me…

It has really been a long time. I always feel so overwhelmed during the school season, that I never feel like doing much else (from the stress). I have so much to share. New journey’s I’ve taken since last time. New experiences. Even new struggles that have come between my path.

Pizza Rolls

Going to show you have to make home made pizza rolls! Very good and tastes like pizza but faster and easier to make. Great as a party snack and/or appetizer or meal for a family.

 

Ingredients:

  1. 3 Cups Flour
  2. Pepperoni 
  3. Block of Mozzarella (or you can all ready cubed)
  4. 2 Dry Yeast Packet 
  5. Olive Oil
  6. Butter
  7. Clove of Garlic
  8. Water (add as needed)
  9. 1/4 cups of white sugar

Makes about 15-20 rolls 

Tools: 

  1. Baking Bowls
  2. Hands! 
  3. Baking Pan
  4. Rolling Pin
  5. Plastic Wrap

  1. Put 3 cups of flour, 2 dry yeast packets, 1/4 cup white sugar and add 3/4 cups of water in a baking bowl. Mix until you get clay like dough texture (you have to keep adding water until all powder is mixed, I usually use 1/4 cup at a time). {I mix everything with my hands.}
  2. Add 1/4 cup of olive oil with dough and mix again.
  3. Add another 1/4 cup of olive oil (do not mix) in with dough ball and close with plastic wrap or some sort of cover. IMG_6919
  4. Leave dough to rise btw 45mins-1hr.
  5. While waiting you can chop up block of Mozzarella (if you didn’t buy them cubed). As it gets closer to when the dough is finish rising. Melt the butter and crush the clove of garlic (oregano optional). Mix together.
  6. Once dough rises. Sprinkle some flour into dough and on open surface to kneed the dough. {Use those muscles!}

  7. Leave large ball of dough in the bowl and just tear piece to make small balls for individual rolls. {How much dough you use determines how many rolls you get in the end.}
  8. Use rolling pin to roll out the small piece of dough ball to make it flat. {I never make a perfect circle, that’s just me}
  9. Place pepperoni and mozzarella in to rolled out dough. {You can put as much pepperoni and cheese as the dough can hold.}

  10.  Close the dough around the pepperoni and cheese (if there’s a slight tear or opening, thats ok you can leave it or try to patch it up. It doesn’t have to be perfect). {Repeat until all the dough is gone. If you have extra pepperoni and cheese you can eat it or save it for later or use it for something else.}
  11. Preheat oven to 350º. Spread melted butter garlic on each roll. Then place in the oven for 25-20mins.

  12. After time is finished take it out and enjoy!{You can buy marinara sauce, or if you know how to make it yourself that’s great, or do what I do and use pasta sauce (just warm it up)}

Hot Chocolate

This recipe is easy, simple, and fast! It doesn’t take a lot of ingredients and taste way better than the powdered hot chocolate (though I still use it when I’m lazy). Perfect for snowy days or cold rainy days! 🙂

Ingredients:

  1. Chocolate Chips or Bark (milk or dark)
  2. Milk (1% or 2% or whole) 
  3. Heavy Whipping Cream
  4. Powdered Sugar 

Makes about 2 cups

Tools:

  1. Pot
  2. Measuring cup
  3. Mixer/Whisk (manual and/or electric) 
  4. Bowl

  1. Measure 1 1/2 cup of milk (using whole milk will make it much more creamy and thicker). Pour into cooking pot. Put to medium heat.
  2. Measure 3/4 cup of heavy whipping cream. Pour into cooking pot.
  3. Stir with whisk (or any utensil) consistently to prevent from burning.
  4. While waiting for that to heat up a bit. You can make whip cream with the left over heaving whipping cream. {There are no measurements to scale on making whip cream. I add as I go.} Put heavy whipping cream in a bowl. Take some powdered sugar add to bowl (less powered sugar then whipping cream or it will be too think and less of a whip). You can mix with the an electric mixer or whisk (it will take much longer for the it be fluffy manually). Mix until fluffy like whip cream!
  5. Make sure you’re watching the milk to make sure it does not burn or boil over (if so lower heat). Put chocolate chips into a safe microwaveable bowl and heat until melted (heat in short increments until desired effect). {You don’t have to melt the chocolate if you don’t want to. You can put it straight into the hot pot of milk and cream, but bigger chunks take a bit more to melt and mix. Also, how much chocolate chip determines how rich you want the hot chocolate!} IMG_6796.jpg
  6. Add chocolate into hot pot. Mix until all the chocolate has melted and milk is warm and creamy. {If you wish to have more than 2 cups. It is very easy just to add more milk and heavy whipping cream as you go along. Remember to add more milk than heavy cream.}      IMG_6799
  7. Put in mug and add whip cream in top of the hot chocolate!

Pork Chop Crunch

This recipe I made up, by ‘made up’ I mean I didn’t look up a recipe. I’m sure someone has already made it somewhere out there, its fast and easy. One of the many quick dinner’s I make. I will also show some basic sides to make to go with the meat.

Ingredients:

  1. Thin Cut Pork Chops (honestly can use any cut of pork chops)
  2. Veggies: Green Beans & Broccoli
  3. Starch: Tater tots (frozen)
  4. Panko
  5. Vegetable Oil
  6. Coconut Oil/Olive Oil
  7. Salt & Pepper
  8. Thyme
  9. Rosemary
  10. Parsley
  11. 2 large eggs (for 5 thin cut pork chops, add more if required) 

Prep/Cooking Time: Approximately 30-45mins

  1. Take 2 pans, put vegetable oil in one and coconut oil in the other, (I don’t really use measure to scale when I cook. I use what I believe is enough and add as I go) I would say to cover the whole pan. {You can also substitute the coconut oil with olive oil or even vegetable oil, we are using it for the veggies, so it’s a matter of health and taste.} Heat the oils on the pan as you prep the meal. {At this time, preheat the oven for the tots to whatever the instructions say on the bag}IMG_6643
  2. Rinse the veggies and cut them. Add the veggies with the coconut oil. Mix for consistency. Then set aside to settle.
  3. Rinse the pork chops (I always rinse my meats). Add salt, pepper, thyme, rosemary on the pork (front and back).
  4. Get a 2 separate containers. One for the 2 eggs (mix) lightly add salt & pepper. One to put Panko crumbs in (preferably these containers should fit the size of your pork chops).
  5. {Add the tots in the oven whenever preheat is finished.}

  6. Go back to your veggies and add: salt, pepper, parsley, & thyme. Mix for consistency. Let it settle and cook. {Make sure to always go back and mix to prevent from burning}
  7. Take the mixed eggs dip pork chops in front and back. Then to the next container with the Panko crumbs, dip front and back. Place directly into the hot vegetable oil pan. {Repeat for each pork chop}

    I find it easy to have it as a station to prevent spilling

    8. Cook until Panko’s are brown and meat is cook (145ºF). Veggies until mid texture (not too soft and still has a crunch). {Take tots out when finished}

    You have your dinner, “Pork Chop Crunch meal!”

Oreo Truffles (none bake)

My first blog recipe YAY! I’m doing dessert first since I have the biggest sweet tooth. This recipe I got through my friend that baked it back from our ‘Friendsgiving.’ I didn’t realize it was so easy until he gave me the link to the Pinterest he got it off of. These are perfect for a last minute dessert to bring to a party! This is how I made mine…

Ingredients:

  • 1 bar of Cream Cheese
  • 1 package of Oreos 
  • Almond bar (white, milk, or dark chocolate)

Makes about 25-35 pieces (depending how big you make the balls)

Tools:

  • 2 Bowls (1 bake safe)
  • Food Processor/Blender 
  • Baking Spatula 
  • Your Hands!/electric mixer (optional)
  • Baking pan
  • Wax/parchment paper
  • Pot (to use to steam)/microwave
  1. Get your Oreos and put them in the food processor or blender. Have them all crushed. {If you don’t have any of these, like we didn’t during the holidays. You can put them all in a big Ziplock bag and crush them by hand. It will take some time doing it this way. You need the Oreos as fine as you can.} After they are crushed put them in a bowl.
  2. Take the cream cheese and add it in the bowl of processed Oreos. Then mix the cream cheese and Oreos well. {You can use your hands like I did. But if you don’t want them to get messy or have the mixture under your nails. You can use an electric mixer or baking spatula.}
  3. Take your baking pan and put parchment paper on top (so the truffles don’t stick). Once you have mixed them well. Take a small piece of the truffle, and start rolling them into a ball (the size will determine how many you make in the end). During this time (if you’re a multitasker like me), take half of your Almond bar and start chopping them into smaller pieces. {Putting big bars to try and melt will take a much longer time, the smaller the better}. There are 2 ways to melt chocolate: putting it in the microwave and melting them or taking a pot add some water and using a bake safe bowl to put on top to melt the chocolate (steaming). Steaming, is a less chance of burning the chocolate and drying them out like a microwave would. {Make sure you are watching and constantly mixing your chocolate and putting in low temperature to avoid burning}
  4. Once you have made all your truffles. Dip them in the chocolate. {You can take it out of the pot (be careful, hot) or leave it in like I did}. I used a spoon to dunk the Oreos truffles in and take them out to prevent the chocolate to stick to fingers. After you dip them, put them back on the parchment paper.IMG_6609

Update: A New Page

My best friends recommended to me that I should make a page about all the food I make. Since I’m always posting some of the process on Snapchat and people say my food taste good, so here goes…

I will be making a page about some recipes I make up or have gotten and are things that I find useful. I like to cook but I also don’t like a long process, or a lot of dirty dishes for that matter. Being a mom means things that are fast and easy. A one income family also means saving money and being frugal with groceries, but still finding them to be healthy. I hope you all enjoy this new page and follow me on my journey. My first post will be tomorrow so stay tuned!
